Piccolo Organic Tomato & Mozzarella Spaghetti
This traditional Roman dish combines little pieces of spaghetti with a rich, sweet tomato and red pepper sauce, cooked in olive oil with a pinch of basil and made creamy by smooth tangy ricotta.

We like to sauté tomatoes in a dash of olive oil or butter before mashing or pureeing as cooking tomatoes in a little fat increases the absorbable lycopene, a wonderful antioxidant.
